Ingredients:
- 1 cup boiling water
- 2 teaspoons baking soda
- 1/2 cup cocoa
- 1 cup butter, room temperature
- 2 cups plain flour
- 3 eggs, slightly beaten
- 2 1/2 cups plain flour
- 1 cup buttermilk, room temperature
Directions:
- Preheat oven to 350 degrees and grease and flour 3 round cake pans.
- Cream butter and sugar until light and fluffy.
- Add beaten eggs, a little at a time, beating well after each addition.
- Gradually add flour and buttermilk, alternately, ending with flour.
- Stir soda and cocoa together.
- Add boiling water to the soda and cocoa mixture and mix well.
- Stir chocolate mixture into the batter until well blended.
- Pour batter into prepared pans.
- Bake 20 – 25 minutes, or until center springs back when lightly touched.
- Cool on racks.
Chocolate Cream Cheese Frosting Ingredients:
- 8 ounces cream cheese, room temperature
- 1 stick butter, room temperature
- 4 cups powdered sugar
- 1/2 cup cocoa
- 1/2 pint whipping cream, whipped
- 1 pint fresh raspberries
Frosting Directions:
- Mix cream cheese and butter together.
- Mix powdered sugar & cocoa.
- Add cocoa mixture to cream cheese mixture. Beat until light & fluffy, then fold in whipped cream. Assemble cake, adding a layer of frosting and raspberries between layers.
