Ingredients:
- 3 green tomatoes, sliced ¼-inch thick
- 1 tsp. sea salt, divided
- ½ tsp. black pepper
- 2 c. whole wheat flour
- 2 tsp. garlic powder
- 1 c. cashew milk
- 1 c. whole-wheat panko breadcrumbs
- 1 c. cornmeal
- Olive oil cooking spray
Directions:
- Preheat convection oven / oven with air fryer to 425 degrees, or countertop air fryer to 400 degrees.
- Pat tomato slices dry with paper towels.
- Sprinkle with salt and pepper.
- Stir flour, ½ teaspoon salt, and garlic powder together in a shallow dish.
- Place cashew milk in a separate shallow dish.
- Stir panko and cornmeal together in a third shallow dish.
- Dredge the tomato slices in the flour mixture, then dip in cashew milk, then dredge in the panko mixture.
- Place slices on a baking sheet or place a single layer in countertop air fryer.
- Coat the tomatoes well with cooking spray.
- Cook until crispy and golden on one side, about 4 minutes.
- Flip the tomato slices; coat with cooking spray and cook until golden and crispy on reverse side, about 4 minutes.
- Transfer to a plate. If using a countertop air fryer, repeat the procedure with the remaining tomatoes.
Enjoy these in any way you like, but Gavin recommends them on top of a salad with ranch dressing!
