Ingredients:
- 1 24 oz. bag or 2 12 oz. bags of frozen Butter Peas (I use Pictsweet Farms)
- Chicken or vegetable stock to cover
- 1/2 onion of choice
- 2 tbsp. butter
- Salt, pepper, and garlic to taste
- 1/4 tsp. thyme, marjoram, or any herb of choice
Directions:
- Add frozen butter peas to a pot.
- Cover with stock.
- Add 1/2 onion (not chopped or diced), butter, salt, pepper, and garlic.
- Bring to boil over medium-high heat and boil for five minutes.
- Lower heat, cover pot, and simmer on low for 25 – 35 minutes, checking occasionally to see if more liquid is needed. Add more stock or water if needed.
- Add thyme, marjoram, or other herb(s) of choice and simmer for 10 additional minutes.
- Reduce heat to keep warm and serve when ready.
Note: This recipe has been adapted by Susan. Mamma would add some country ham and omit the salt. For a holiday meal, Susan might also still do that.
